Varietals As you are probably already aware, there are many varieties of coffee in the world. Even though they may be the same genetic plant, the climate, altitude, and soil in which they grow widely effects the final taste of the coffee. Like wine, coffee from different areas of the world takes on different flavor characteristics. The flavor profile for coffee is based on many components including acidity, aroma, body, aftertaste, and sweetness. A balance between these components is the goal of a rich, flavorful, well developed coffee. Some people, however, prefer a coffee to be higher in one of these areas than others. Another large factor in the flavor of coffee is the darkness of the roast. As coffee is roasted the bean takes on a deeper flavor, the essential oils in the bean come to the surface, and the amount of caffeine decreases. Where the roasting process is stopped determines the flavor profile for that particular coffee. Coffee from one specific area of the world can be roasted to different levels to create different flavor profiles. Decaffeination Coffees are decaffeinated through a series of steps. The first step is to steam the green beans to loosen the chemical bonds of caffeine. If the 'chemical' process is followed, a solvent washes over the beans to whisk away the caffeine. The beans are then steamed again to rinse any residual solvent out of the bean. The beans are then dried and sold to be roasted. In the 'water' process (or Swiss Water Processtm) the steamed beans are soaked in water to wash away the caffeine. A certain number of soluble taste elements in the beans are lost with the caffeine. Therefore, the caffeine is extracted from the water and then reintroduced to the beans, allowing them to reabsorb those flavor components. In both processes the caffeine is then extracted from the solvent or the water and then sold to soft drink manufacturers and medicine companies. |

Coffee that has been lightly roasted holds a brighter flavor, called ‘acidity’ in coffee descriptions. It has less bitterness, as the bean isn’t roasted long enough to develop the bitterness component. However, lighter roasts are not as aromatic and have less body. They could be compared to the ‘light white wines’ of the coffee world. Darker roasts have a more complex aroma, body, a thicker mouth feel, more bitterness and less caffeine. Some people, however, find dark roasts too bitter with an unpleasant aftertaste. |
